Breakfast appetizer: Avocado, Tomato & Shallots. Don’t forget the home made Sour Dough Bread!

Don’t you love a big breakfast? I don’t know if I just like eating good food in the morning or as we get older, don’t ask, our appetite gets bigger and we need more food to get us going in the AM! I think it’s just me because I have always been like this. Show me the food! It’s a good thing I exercise or I’d be in trouble! Eat whatever you wish or whatever your doctor tells you is right for you. I do my own thing and have been for years. I’m just a healthy food snob, at times, and I’m proud to be! I will never turn down ice-cream, cookies or french fries!

I did not grow up on Avocados, it was an acquired taste about 15yrs ago. It took time to like the taste but eventually my brain and my stomach said it was yummy, so why not? I kept eating them!  Well, the health professionals tell you they are good for you but since I am not a health professional, you should do your own research and decide for yourself. I did grow up eating the good bread, onions and tomatoes in the morning along with my eggs. I changed the onions to shallots and changed the tomatoes to Roma tomatoes. My dad would buy scallions and onions by the gazillions and we would eat them raw with lots of salt. The same with the Beefsteak tomatoes, either we would have them in the house or we would grow in the yard in the summer. I’m more of a shallot fan so out with the scallions for me. The “Roma VF” variant was most common in seed catalogs as of 2007. It was developed by the USDA‘s Agricultural Research Service (ARS) scientists in Beltsville, Maryland, in the 1950s as a fusarium wilt-resistant cultivar.[3]

Shallots: Like garlic, shallots are formed in clusters of offsets with a head composed of multiple cloves. The skin color of shallots can vary from golden brown to gray to rose red, and their off-white flesh is usually tinged with green or magenta.

Shallots are extensively cultivated for culinary uses, propagated by offsets. In some regions (“long-season areas”), the offsets are usually planted in autumn (September or October in the Northern Hemisphere). In some other regions, the suggested planting time for the principal crop is early spring (typically in February or the beginning of March in the Northern Hemisphere).
